What’s in Season? Berries and Cherries

No classic Kiwi Christmas is complete without backyard cricket, summer BBQs and an abundance of delicious food!

Strawberries, raspberries, blueberries – the list is endless! Berries are not only delicious but also give a good dose of antioxidants and fibre – so you’ll have more energy to get out and enjoy those long summer days.

Treat yourself to these Christmas Berry Tarts from 5+ A Day, that are not only good for the soul, but good for the body too. Not to mention, it’s also great to whip up for dessert after Christmas lunch!

Christmas Berry Tarts

Serves: 12    |     Preparation: 15 minutes     |     Cooking: none


Ingredients
  • 1 handful of fresh strawberries, stems removed
  • 1 handful of fresh blueberries
  • 1 handful of fresh raspberries
  • ½ lemon, juice and zest
  • 250g mascarpone
  • 1 cup thick Greek yoghurt
  • Silver sprinkles (for Christmas)
  • Packet of 12 individual sweet tart cases
  • Fresh mint for garnish

Method

1. Mix mascarpone, yoghurt, lemon juice and zest.

2. Spoon into tart cases and decorate with sliced strawberries, blueberries and raspberries

3. Sprinkle with sliver balls and garnish with mint

4. Keep refrigerated until ready to serve
