What’s in Season? Mango

Sweet, succulent and scented, nothing takes our taste buds away to the tropics quite like the taste of sumptuous mangos!

Known also as the ‘King of Fruit’ originating in tropical areas such as India and Sri Lanka, Mangos are not only delicious and vibrant but they are a good source of folate, Vitamin A & C, a source of dietary fibre, Vitamin B6 & A and contain potassium. So, it’s no wonder they’re known as the King of Fruit!

As we head in to spring, it’s time to step up the ice cream game with this super easy Tropical Ice-Cream from 5+ A Day Charitable Trust that’s sure to be a hit in any household!

Tropical Ice Cream

Serves: a crowd    |     Preparation: 15 minutes     |     Cooking: Overnight and then 30 minutes


Ingredients
  • 3 ripe bananas, chopped
  • 1 pineapple, chopped
  • 2 mangos, chopped
  • 3 green kiwifruit, chopped
  • 3 gold kiwifruit, chopped
  • 2 tablespoons lite coconut cream
  • Shredded coconut to garnish

Method

1. Place all chopped fruit in a zip lock bag and leave in the freezer overnight

2. Remove fruit from freezer and allow to thaw for 15 minutes

3. Place all fruit in a food processor and blend until smooth, add coconut milk to loosen slightly

4. Serve with shredded coconut (we toasted ours in a frying pan for a few minutes – no oil required but be careful it doesn't burn)
